Grilled Bison Meatloaf from Golden Owl Tavern

Golden Owl Tavern opened earlier this year in University City. The menu features southern classics with a twist. Chef Ben Lacy is showing us their version of meatloaf using bison and a grill.



  • 2 cups onions, Chopped
  • 1/4 cup garlic, Chopped
  • 1 quart button mushrooms, Chopped
  • 1 cup milk
  • 2 cups Panko
  • 5 eggs
  • 1.5 oz Kosher salt
  • 0.5 oz black pepper
  • 2 Tbsp chopped sage
  • 0.25 cups chopped parsley
  • 8 oz fontina, Grated
  • 5 lbs Bison, Ground


1. Sautee onions, garlic and mushrooms in oil. Cool and reserve

2. Mix together all ingredients and cook a small piece to check seasoning

3. Spray a loaf pan with pan spray and add meatloaf mixture making sure to pack the mixture down tightly so there are no air bubbles

4. Cook at 300* Fahrenheit until the meatloaf reaches an internal temperature of 155 degrees Fahrenheit; approximately 1 hour

5. Cool completely

6. slice into 1″ thick slices
