We were drooling over the collard greens that Chef Sly cooked up for us today. He even brought in the pulled pork and cornbread. We also talked with Chef Sly about the cultural significant of this dish! And just so you don’t get jealous of hearing us talk about just how delicious these greens were, here’s the recipe.
Collard Greens:
Feeds Approximately 6 people
2 Bunches of Collard Greens
2 Tablespoons Butter
1/2 Small-Medium diced Yellow onion
1/2 Small-Medium diced Red Pepper
5 Cloves Minced or shaved Garlic
1/4 Cup Brown Sugar
6oz Apple Juice
3oz Apple Cider Vinegar
1/2 teaspoon Red Pepper Flakes
1 teaspoon Garlic powder
1 teaspoon Ground Black Pepper
1 Tablespoon Salt
Add half of the butter (1 Tablespoon) to pot that’s on Medium heat.
Add Diced Yellow Onion, Red Pepper and Minced Garlic and sauté for 2min or until it starts to turn light brown in color
Add Cut and Cleaned Collard Greens
Add all other ingredients except last tablespoon of Butter
Stir ingredients together and turn heat to Medium-High
Let cook or braise for approximately 20 minutes or until Collards turn dark green in color
Add last tablespoon of butter and stir until melted
