Making Delicious Vegan Dishes

Chef Julia teaches us how to make a delicious vegan burger and pasta salad!

Cookout season is in full swing. What are you throwing on the grill? Have you ever tried a vegan burger? Making the transition from eating meat, to vegan, can be made easier with just a few easy substitutions. Chef Julia Simon, founder and executive chef at Nourish joined us on QC Morning. She showed us just how easy it is to make a vegan cookout style meal that’s just as delicious as your normal cookouts.


Cookout-style Big Double Bacon Beyond Burgers

serves 2

4 Beyond Burger Patties, hand-formed and ready to grill (buying the preformed patties is just fine)

1 yellow onion, sliced thin, grilled or sauteed

6 slices vegan bacon, cooked ahead (opt’l)

Cajun seasoning

Sliced vegan cheese, yellow, 4 pieces

Veganaise or other vegan mayo


Ketchup (I’m replacing this with sliced tomato this morning since I got a bunch of beauties fresh out of the garden)

Sliced pickles

6 leaves lettuce

2 hamburger buns

Cook your patties as you would any burger patty, flipping halfway through and adding your cheese. Cover grill to finish cooking patty through to melt the cheese. Toast your buns 1-2 minutes, then assemble burger: mayo, mustard and Cajun seasoning on both sides, then tomato and lettuce on one (if not using tomato, replace with ketchup), pickles and onions on the other, burger in the middle, top, squish and serve.


Pasta Salad with Tahini-Grilled Broccoli and Pine Nuts 

serves 4-6

1/3 cup sesame oil, toasted
1/4 cup red wine vinegar
1/2 cup water
1/4 cup lemon juice
2 tsp sea salt
10 cloves garlic, minced
1/2 cup plus 2 tbsp tahini, stirred
1/2 tsp black pepper
3 tbsp EVOO

One large head broccoli, cut to medium florets

1 cup grape or cherry tomatoes, halved

1/4 cup flat-leaf parsley, chopped

1/4 cup pine nuts, toasted

2 cups (dry) rotini or penne pasta (about one box), cooked, chilled

Blend or whisk the first 9 ingredients until very smooth.  Toss 1/3 of the dressing with broccoli florets and grill until charred in places and cooked through. Meanwhile, combine remaining ingredients and add grilled broccoli and toss just before serving.
