Oatmeal Raisin Craisin Pecan Cookies

What kind of cookies do you leave out for Santa? Well, this year you might change your mind. Today on QC@3, Chef Lisa Brooks of Heart & Soul Personal Chef Services joined us in the kitchen to show us how to make a unique and delicious cookie.

Oatmeal Raisin Craisin Pecan Cookies:

·         1 lb Butter, softened

·         2 lbs Brown Sugar

·         2 tsp salt

·         4 eggs

·         4 tsp vanilla

·         2 oz milk

·         24 oz flour

·         1 oz baking powder

·         1/2 oz baking soda

·         20 oz oats

·         6 oz raisins

·         6 oz Craisins

·         6 oz pecans

Method:

Preheat oven to 375°.

Cream butter and sugars together in stand mixer until light and creamy. Add salt, eggs, milk and vanilla. Stop mixer to add flour, baking powder and baking soda. Mix on low speed until incorporated. Add remaining ingredients.

Scoop cookie dough on parchment lined baking sheet, 6 to a pan. These cookies spread while baking! Bake 10-12 minutes until browned.

Dough can be made ahead and refrigerated or frozen!
