Here’s how to make pumpkin raisin bars perfect for fall

With cooler temps in the air, one of the ways to get the family together for a cozy night at home is a good pumpkin recipe. Kristen Miranda with the QC Life team shared her recipe for Pumpkin Raisin Bars and the word is out – they’re delicious. We wanted to share this treat with you! Heads up, this recipe makes about 48 bars.

PUMPKIN RAISIN BARS 🎃

Here’s what you need:

  • 2 cups all-purpose flour
  • 2 cups of sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp salt
  • ½ tsp cloves
  • 1 cup oil
  • 4 eggs
  • 15 oz can (2 cups) pumpkin
  • ½ cup chopped nuts
  • ½ cup Sun-Maid raisins

Here’s the step-by-step: 

  1.  Heat oven to 350*
  2. Grease 15 x 10 x 1-inch baking pan
  3. Combine all ingredients except nuts and raisins in a bowl
  4. Beat at low speed until moistened
  5. Beat 2 minutes at medium speed
  6. Stir in nuts and raisins
  7. Pour into greased pan
  8. Bake 25-30 minutes, until a toothpick comes out clean
  9. Cool completely

 Cream cheese frosting

  • 1/3 cup butter or margarine softened
  • 3 oz. package of cream cheese softened
  • 2 cups powdered sugar
  • 1 tablespoon milk
  • 1 tsp vanilla
  1.  In a small bowl, combine all ingredients
  2. Beat until smooth
  3. Frost cooled pumpkin bars
  4. Store in refrigerator
