You can eat like a Disney princess for the day with just a few simple recipes. Melanie Marcus, Dole Food Company’s Registered Dietician, shared a few recipes with QC@3 to let us eat like royalty. Dole has created official princess recipes specifically for parents, grandparents and guardians to make with their kids.
Dole sent over these two fun recipes for us to make:
Belle’s Enchanted Red Rose Smoothie: Vegan, Vegetarian, Gluten-Free, Low Fat and Low Sodium
Total Time: 15 minutes Prep Time: 15 minutes Calories: 136 Servings: 4
1 ripe Banana, peeled, cut crosswise into thirds and frozen
2 cups hulled and quartered Strawberries, frozen, plus additional whole for garnish
1 ½ cups 100% apple juice
1 cup Raspberries, frozen
1 cup stemmed and pitted Cherries, frozen, plus additional with stem for garnish
Purée all ingredients, except garnishes, in a blender on high until smooth; serve garnished with strawberries and cherries, if desired. Makes about 5 cups.
Cinderella’s Glass Slipper Veggie Tea Sandwiches: Vegetarian
Total Time: 15 minutes Prep Time: 15 minutes Calories: 156 Servings: 4
¼ cup raw cashews
2 Green Onions, thinly sliced
1 Radish, chopped
½ small Carrot, peeled and chopped
¼ cup small Cauliflower florets
2 tablespoons fat free cream cheese
½ teaspoon kosher salt
8 slices 100% whole wheat bread
1/6 English cucumber, halved lengthwise and thinly sliced crosswise
Step 1: Combine cashews and enough hot water to cover in a small bowl; let stand 30 minutes, then drain.
Step 2: Pulse onions, radish, carrot, cauliflower, cheese, salt and cashews in a food processor until mostly smooth. Makes about 2/3 cup.
Step 3: Cut 16 glass slippers out of bread slices using a (4-inch) glass slipper or high-heeled shoe-shaped cookie cutter.
Step 4: Spread onion mixture on 8 glass slipper pieces; top with cucumber and remaining 8 glass slipper pieces.
