CHARLOTTE, N.C. (QC Life) - Enjoy this delicious pastry made from local ingredients by Carolina Farm Trust.
Leressa Rucker, Executive Pastry Chef of Carolina Farm Trust, joined us in the kitchen yesterday to demo making a vanilla bean grilled pound cake.
This cake uses:
- Caramelized peaches
- Bourbon caramel sauce
- Rum Vanilla bean Chantilly cream
- Pecan praline
Carolina Farm Trust (CFT) offers holistic strategies that address various parts of their shared community food system. CFT also strives to restore the connections between agriculture, chefs, and consumers and to make local ingredients more accessible to rural and urban areas.
Rucker will also be creating a new preservative-free pastry program using locally sourced ingredients in their new commercial kitchen. This program will partner with several local farmers to provide ingredients.
