CHARLOTTE, N.C. (QC Life) - Try this ceviche with a twist by Chef Joya.
Chef Joya, a personal chef that specializes in vegan cuisine, joined us in the kitchen this morning to make avocado and heart of palm ceviche.
Ceviche is normally cooked with seafood; however, this vegan twist makes a great substitute.
Joya also hosts private home dinners and has five digital cookbooks.
The ingredients used in this dish include:

- 1 ripe avocado
- 2 Roma tomatoes
- 1 jalapeño 1/2 cucumber
- 6-8 limes and lemons mixed
- 1 can of hearts of palm chopped and rinsed ( marinated with soy sauce and nori Furikake)
- Cilantro to taste
- Salt and pepper to taste
- Mexican oregano
- 2 cloves garlic chopped
