CHARLOTTE, N.C. (QC Life) - Try this ceviche with a twist by Chef Joya.

Chef Joya, a personal chef that specializes in vegan cuisine, joined us in the kitchen this morning to make avocado and heart of palm ceviche.

Ceviche is normally cooked with seafood; however, this vegan twist makes a great substitute.

Joya also hosts private home dinners and has five digital cookbooks.

The ingredients used in this dish include:

  • 1 ripe avocado
  • 2 Roma tomatoes
  • 1 jalapeño 1/2 cucumber
  • 6-8 limes and lemons mixed
  • 1 can of hearts of palm chopped and rinsed ( marinated with soy sauce and nori Furikake)
  • Cilantro to taste
  • Salt and pepper to taste
  • Mexican oregano
  • 2 cloves garlic chopped
