CHARLOTTE, N.C. (QC Life) - Instead of a huge breakfast while everyone is opening presents of Christmas morning, why not make a couple of easy dishes that you can quickly eat and get back to the gifts! Chef Yvette Kerns shared a few recipes with us!
Christmas Spiced Apple & Eggnog Oatbake
· 6 Cups of Quick Oats
· 4 cups Eggnog

· 1/4 cup Avocado Oil
· 2 teaspoons Pumpkin Pie Spice
· 1 teaspoon salt
· 6 medium diced Granny Smith Apples (skin on)
· 1 cup raisins

· 2 cups granola of choice
· Honey or maple syrup for drizzle
Instructions:
· Preheat oven to 350 degrees. Spray a 9 x 13 baking pan with cooking oil.
· In a separate bowl mix the first 7 ingredients together until well blended. Proceed to transfer the oat and apple mixture to the baking pan. Top with granola and honey/maple drizzle. Spray top of the Oatbake with cooking spray. Bake at 350 for about 20 minutes or until granola is lightly browned. Serve with a dollop of vanilla Greek yogurt. ** you can also opt to use muffin pan instead for individual oat bites- this is what we will be using today.
Christmas Morning Egg Bites
Ingredients
· 1 dozen eggs
· 12 slices of deli style ham
· 1 cup shredded cheddar

· 1/4 cups granola chopped chives or scallions
· 1/4 cup julienned roasted red pepper
· Seasoning salt
· Pepper
Instructions:
· Spray muffin pan with cooking spray. Fold ham slices in half and place gently into muffin mold.
· Crack and place egg on top of ham slices. Season with a touch of seasoning salt or season of choice. Top each egg bite with shredded cheddar.
· Bake at 375 degrees for 20 minutes. Top with chives/scallions/roasted red pepper.
