Here is how it’s made

Rocks Strawberry Margarita

Glass: Collins

Garnish: fresh strawberry half

Recipe:

· 1.5 oz. El Jimador Blanco

· 1 oz. Stirrings Triple Sec

· 1.5 oz. house made strawberry puree

· .75 oz. lime juice

Method: To make one portion, measure ingredients above into cocktail shaker and add ice. Shake well and strain into a Collins glass. Fill with fresh ice. Garnish with half strawberry.

To make strawberry puree: Cut up 2 pounds fresh strawberries into slices or pieces (2 plastic clamshells = 2 pounds). Place in a Cambro. Dust and cover with 2 cups sugar. Toss strawberries to coat with sugar, then set aside to macerate for at least 1 hour or longer if time allows. Strawberries will begin to release juice, which will blend with the sugar to create a delicious strawberry syrup. Scrape all into VitaMix and add 1 quart water. Puree vigorously until the puree is smooth and uniform, no bits… and it will be pink. Pour into a container and store in the cooler for up to 3 days.
