CHARLOTTE, N.C. (QC Life) - When we think about vending machines, nutritious, quality food is usually not the first thing that springs to mind. Thoughtful Baking intends to change that.
Chef Mary Jayne Wilson, the owner of Thoughtful Baking came by the QC Kitchen today to tell us more about her unique and creative business expansion.

Wilson said, starting today customers can purchase her delicious pies as well as a variety of dinner, lunch and breakfast items and snacks at their new ‘Farm to Fridge’ vending machines.
They are currently operating two machines, one at Birdsong Brewing in Noda and the other at Traditions inside Park Road Shopping Center, with a 3rd one on the way, stocked with both ready-to-eat and take-and-bake items.
And the process is simple and fast; you just need to swipe your credit card and pick an item; all the cooking instructions will be provided as well.

In spite of the unconventional distribution channel, Wilson ensured that they still use locally grown and in-season ingredients.
She also prepared the ‘Luna Pie’ for us, the name alluding to the team’s favorite road trip snacks – the moon pie. It’s made of chocolate pastry cream, marshmallow meringue, a graham cracker crust, and a crispy chocolate shell.
