CHARLOTTE, N.C. (QC Life) - Packing lunch can be a laborious, boring, and stressful experience. In honor of National Pack Your Lunch Day, Chef Yvette Kerns, “The Petite Cook Charlotte” showed us how to make packing lunch a fun, flavorful, and fabulous experience with a few simple and creative tips and tricks!
Stack It: Stuffed Greek Sweet Potato:
1 baked sweet potato
3-4 tablespoons hummus

3-4 tablespoons tabouli
2 tablespoons tzatziki
1 teaspoon diced Red onion
1 tablespoon Diced tomatoes
Feta cheese wedge

Roasted chick peas
Lemon wedge Parsley or Micro-greens for garnish
Optional Add Ons: chopped chicken, falafel , Sundried tomatoes, black olives
Wrap It: Mediterranean Wrap:
To make the wrap simply follow recipe for the stuffed Greek sweet potato using a wrap in place of the sweet potato.

2 cooked chicken tenders cut into 8 bite-sized pieces
4 tablespoons of hummus or baba ghanoush dip
4 tablespoons tabouli
1 cup salad greens

Greek olives
Grape tomatoes Sliced pita bread or pita chips
