Hole In One Pimento Cheese
- 2 cups shredded sharp Cheddar cheese
- 2 cups shredded Colby cheese
- 2 (4 ounce) jars diced pimento peppers, drained OR for a spicy pimento cheese: diced jalapeños
- 1 cup jar mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- salt and pepper to taste
Mix all ingredients together until blended well. You can use as a dip or make sandwiches. Have a little fun and top a few slices of bacon and pepper jelly.
It’s A Birdie Egg Salad
- 6 large hard boiled eggs
- ⅓ cup mayonnaise
- 2 tablespoons sweet pickle relish
- 2 teaspoons spicy brown mustard
- 1 teaspoon sugar (don’t skip this)
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- ¼ teaspoon ground black pepper
- OPTIONAL: a few dashes of hot sauce
Begin by adding diced hard boiled eggs to a mixing bowl. Add remaining ingredients and mix thoroughly. Serve on your favorite bread, crackers, or even use as a dip for vegetables.
