Fluffy Buttermilk Biscuits + Flavored Butter Trio

From: Brunchin’ with Chef Joya cookbook

Biscuit Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 6 tbsp very cold vegan butter
  • 3/4 cup vegan buttermilk (3/4 cup plant milk + 2 tsp lemon juice or vinegar)

Instructions:

  1. Preheat oven to 450°F.
  2. Mix dry ingredients. Cut in cold butter until crumbly.
  3. Add buttermilk and mix just until combined.
  4. Roll out, fold the dough a few times, then cut into biscuits.
  5. Bake 12–15 minutes until golden.

Flavored Butters (optional add-on):

  • Maple Cinnamon: 1/2 cup vegan butter, 1 tbsp maple syrup, 1/2 tsp cinnamon
  • Garlic Herb: 1/2 cup vegan butter, 1/2 tsp garlic powder, 1 tbsp chopped parsley
  • Hot Honey: 1/2 cup vegan butter, 1 tbsp vegan hot honey or agave + chili flakes
