Executive Chef Juan Romero and Beverage Director Alex Cañas are rolling out the new brunch every Saturday and Sunday, and they’re kicking things off with a launch party this weekend featuring $1 mimosas.
After hearing guests favor the American-style dishes on their old menu, Chef Romero decided to embrace those favorites and elevate them with Spanish ingredients and techniques.
Expect familiar brunch comfort — think waffles, eggs, and crisp chicken — brightened by the flavors of Spain.
The showpiece dish for the launch is a Catalu-style chicken and waffles: crispy chicken tenders on fluffy waffles, topped with crunchy jamón serrano, spiced sherry syrup, and fresh strawberries — a sweet, salty, and savory trio.
