CHARLOTTE, N.C. (QC Life) - This Christmas, skip the traditional ham and bring something bold and comforting to the table instead: shrimp and grits. Chef James Smith stopped by the QC Life Kitchen to show how this classic Southern dish can be the perfect holiday meal.
Shrimp and grits trace their roots to the Gullah Geechee culture of South Carolina’s Lowcountry, with influences that also connect back to West African cuisine. Made from corn, grits have long been a staple, and when paired with shrimp, they create a dish that’s both hearty and meaningful.
The secret to great shrimp and grits is all in the technique. The grits need constant attention, stirred for at least a full minute to keep them smooth and creamy.
The shrimp are cooked simply in butter with green, red and yellow peppers and red onion. A sprinkle of paprika and red chili flakes brings the heat and color, and once the shrimp turn a pinkish-red, they’re ready! Remember they’ll keep cooking even after coming off the heat.
