He’ll be cooking roasted sea bass (celery root purée, braised kale, purple yam, burnt pearl onions, celery root crisp, miso chili glaze). He also shows off the Wagyu carpaccio (white soy, crispy shallots, pickled chili, apple glaze) and seared Santa Barbara sweet shrimp (ginger chives, sesame seeds, citrus soy).
