CHARLOTTE, N.C. (QC Life) - Yafo Kitchen has launched a brunch menu on Saturdays and Sundays from 11 a.m. to 1 p.m.
It’s $40 for two people and that includes an entrée per person and a selection of mezzes to share.
One of the entrée selections is Shakshuka, which is eggs poached in a spiced tomato sauce that’s inspired by Dr. Shakshuka himself.

Shakshuka recipe

Ingredients
- Extra virgin olive oil - 0.5 cup
- Chopped garlic - 0.25 cup
- Half Jalapeno – diced
- Diced tomatoes – 2 qt
- Kosher salt - 2 teaspoon
- Black pepper – 1 teaspoon
- Smoked paprika – 1 Tablespoon
- Six eggs
Instructions
- Over medium heat cook the garlic and jalapeno in the oil until the garlic turns deep brown. Stir constantly
- Add the tomatoes, salt and pepper and cook for 20 minutes until the tomatoes break down
- Add the paprika, lower the heat and cook for another 10 minutes
- Crack the eggs and add into the tomato sauce
- Cook for four minutes, and stir the egg whites so they cook but the yolks stay runny
- Serve hot
