CHARLOTTE, N.C. (QC Life) - Yafo Kitchen has launched a brunch menu on Saturdays and Sundays from 11 a.m. to 1 p.m.

It’s $40 for two people and that includes an entrée per person and a selection of mezzes to share.

One of the entrée selections is Shakshuka, which is eggs poached in a spiced tomato sauce that’s inspired by Dr. Shakshuka himself.

Shakshuka recipe

Ingredients

  • Extra virgin olive oil - 0.5 cup
  • Chopped garlic - 0.25 cup
  • Half Jalapeno – diced
  • Diced tomatoes – 2 qt
  • Kosher salt - 2 teaspoon
  • Black pepper – 1 teaspoon
  • Smoked paprika – 1 Tablespoon
  • Six eggs

Instructions

  • Over medium heat cook the garlic and jalapeno in the oil until the garlic turns deep brown. Stir constantly
  • Add the tomatoes, salt and pepper and cook for 20 minutes until the tomatoes break down
  • Add the paprika, lower the heat and cook for another 10 minutes
  • Crack the eggs and add into the tomato sauce
  • Cook for four minutes, and stir the egg whites so they cook but the yolks stay runny
  • Serve hot
