CHARLOTTE, N.C. (QC Life) - With the hot weather, not everyone wants something heavy or hot to eat for lunch. If you’re craving something lighter and refreshing, The Perfect Beet has the salad for you.
Chef and owner of The Perfect Beet, Mylan “Lonnie” Miguel, joined our show and shared how to make The Perfect Beet’s quinoa and kale salad with sweet potatoes.
This composed salad is light and is quick to make. The ingredients can also be switched out based on the season.
While on the show, Miguel also shards more information about The Perfect Beet such as the classes it holds.
The Perfect Beet holds cooking classes for adults and kids. Most classes are held in the Steele Creek Area off Westinghouse Blvd. Kids cooking classes and chef demos are at the Huntersville Discovery Place Kids or at the Mecklenburg County Parks and Recreation Centers.

They also host cooking classes that are off-site for personal celebrations and for team building events.
